Contract Cask Racking
This a very simple process where beer is taken directly from the fermenting vessel, put into sterile casks, by means of a five head cask-racking plant.
Finings are added at this stage to ensure all yeast and proteins present in the beer will be gently drawn to the bottom of the cask whilst resting in the pub cellar.
Dry hops can be added to the cask whilst being filled to give a citrus floral aroma to the beer.
Thwaites have an up to date cask handling plant where both 9 gallon and 18 gallon casks can be filled.
